Cashew-Coconut-Milk (or optional with brazil nuts)
Recipe for a super-delicious self-made coffee-whitener, healthy cereal addition or just plain goodness.

Makes: 2 1/2 cups (about 600ml)
Make time: 5-10 min + Soaking time (8h or over night)
Equipment required: Blender, nut-milk-bag or cheese cloth, clean bottle(s)
Ingredients:
1/2 cup (80g) Cashews (soaked for 8h) /optional replace half of the Cashews with Brazil nuts (also soaked for 8h) for a milk-like and creamier texture
1/2 (50g) cup dried Coconut (soaked for 8h)
2 cups (0,5l) filtered water
pinch of sea salt
pinch of vanilla bean powder or splash of vanilla bean extract
optional – 1/8-1/4 tsp Cinnamon
optional – 2 tsp maple syrup or 1 pitted date
Instructions:
Drain the soaked nuts into a sieve and rinse thoroughly. Add drained nuts into a blender with all the other ingredients. Blend on high about 2 minutes until well combined.
Strain through a fine nut-milk-bag over a pan or bowl with a nozzle. Make sure to really press and drain the “milk” out of the nut-pulp. Fill the “milk” into a clean bottle with a lid and keep in the refrigerator. Enjoy your fresh milk in coffee, chai latte, cereals or just as a refreshing drink. Keeps in the fridge for 2-3 days. (If it is standing for a while, give it a good shake before using)
Tips:
Add a tsp cocoa-powder to the mixture and enjoy a healthy chocolate-drink!
The remaining pulp goes well in your breakfast-cereals or as a delicious base for nut-bars and cakes.
